Buffalo Tahini Cauliflower

I love cauliflower. Not in a “let’s make everything out of cauliflower, like pizza crust” kind of way - just the straight up vegetable cauliflower. The beauty of this veggie is that it has a pretty mild flavor on its own, so it takes on the flavor of whatever you cook it in really easily. If you cook this recipe just right, I can nearly guarantee you’ll eat an entire head of cauliflower in one sitting.

Ingredients

1 head of cauliflower, cut into florets

2-3 tbsp hot sauce (I prefer Frank’s Red Hot)

2-3 tbsp tahini with oil

Flaky salt to taste

Method

Preheat oven to 375. In a small bowl, stir together hot sauce and tahini. Add a little bit of warm water if you have a hard time mixing it - 1 tsp at a time. In a large bowl, toss the cauliflower florets with the sauce and add salt to your taste (my taste is a VERY LARGE pinch OR TWO of salt). Pour onto a sheet pan and bake for about 30-45 minutes - until your cauliflower starts to look a little golden and crispy.
